We often make splashbacks out of granite and quartz, of course. having matching worktops and upstands/splashbacks is a very attractive option, holding the kitchen design together. It also minimises changes in thickness etc which can create dirt-traps and ledges, as all your vertical sections will be the same thickness.
Glass splashbacks are frequently used with granite worktops. As a rule of thumb, vertical stone sections are far more imposing than horizontal. .In many kitchens where black granite worktops are fitted, carrying the black over into the splashback would be very “in your face.” In that situation, a glass splashback can seem much lighter.

One benefit of glass splashbacks is that it allows for a strong feature colour to be brought into a basically monochrome room without becoming dominant. This can be a useful approach to ‘lift’monochrome kitchens with a strong black/white/grey thing going on.
